Yi-xing, pronounced ‘yee shing’, is a town near Shanghai with a long history as the “Pottery Capital of China.” It was here during the Ming Dynasty (1368-1644 CE) that the world’s first teapots were created.
Yixing purple clay is still used to produce its distinctive unglazed teapots. Yixing tea pots are distinctive reddish stoneware teapots of Yixing and came to be considered the “best vessel for brewing tea” by Chinese tea aficionados. After prolonged use the Yixing pot will develop a coating that retains flavor and color of the tea. It is for this reason that soap should not be used to clean Yixing teapots. Instead it should be rinsed with fresh water and allowed to air dry. A studious tea connoisseur will only steep one type of tea in a particular pot, so as not to corrupt the flavor that has been absorbed.
